Grown on the hottest and driest soils of the Languedoc,on dry and pebbly lands. The grapes are picked during the coolest hours of the night and are then delicately pressed in a pneumatic press.The juice is cooled and fermented for 2 weeks at low temperatures,then kept on the fine lees until bottling.
